I just made these. In fact, I am still eating them. They are delicious. I am too cheap to go and buy pancetta when I already have bacon in the fridge, so I made this recipe with bacon. I did blanche the bacon for a few minutes to get rid of the smokiness, but I think next time I won't even bother! Mmmmm... bacon and beans!

ReplyDeleteJessie - I found the seahorse cutter at a thrift store - they had a bunch of seahorses and a bunch of dolphins!
I used pancetta, but found it a little too salty. I might try bacon next time. Those cookies are adorable, especially the seahorse!
