FFWD Week #37: Roasted Rhubarb

Rhubarb. Oh Rhubarb how I love you! I really enjoyed the addition of orange zest in this recipe, but I admit that I prefer the stewed rhubarb my mom makes. I kind of like how rhubarb breaks down when cooked and found myself trying to get this rhubarb to do the same - not exactly the point of roasting it! I ate most of the roasted rhubarb with vanilla yogurt over oatmeal. Delicious!

  2. That top shot makes me want to dig into a bowl right now please :) I have to go back and try this one again, I am embarrassed to say. It was so easy I am not sure how I could have messed it up unless it was an issue with the rhubarb. Well, I guess it could have been a user error too :) I will try with more "red" rhubarb and Nana promised to help so that I can end up with the lovely creation she got this week. If only we could get our hands on more rhubarb - it is turning into quite an adventure.....

    sounds wonderful. I told Tricia I would make some again soon,
    and we can all enjoy it together over ice cream. I spent the day
    trying to buy more, but after 5 stores I gave up. We really loved
    it.

  5. I love rhubarb any way, and I think this one has its place, but I most often stew it too. I love it on oatmeal with yogurt, but I made tarts with it this time.

  6. I usually eat rhubarb stewed, too, but I found the roasted even easier to make. Mine did not hold it's shape as was Dorie's goal. It was mushy, just the way I like it.
