FFWD Week #48: Corn Soup

Soup. Yum! I really need to make more soup.
This corn soup of Dorie's is delicious. I loved the garnish of bacon, corn kernels and scallions - I think that they added a lot to this dish. More bacon would have been even better! I used 1% instead of whole milk and threw in some fresh basil and sage instead of the rosemary and thyme. Have a fabulous weekend =D

  1. I went with the 1% as well and it made me feel a little less guilty about all the pancetta on top :-)
    I like the pop of soup against the green background.

  3. I felt the whole milk was heavy too. Would try with 2% next time. I bet the soup was great with basil and sage too!

  5. I used 1% milk too. I don't think it suffered from it. Loved the contrast of the very sweet soup with the bacon.

  7. yep, we went overboard and used half and half along with chicken stock. :-) Love your backgrounds and the soup looks awesome!

  8. I used 1% and skipped the crème fraiche for a lighter soup. Still tasted wonderfully rich, though. I can't believe it's already week number 48 of this group. The year has flown by.
